Warm vegetable and couscous salad for 2 persons
- 200 gr. of couscous
- 1 carrot
- 100 gr peas
- 1 tsp dried thyme
- 1 tsp wholegrain mustard
- 2 tbsp olive oil
Steam cook the couscous and regularly sprinkle with water. Once cooked, put into a salad bowl and separate the couscous grains with your fingers, add the olive oil, salt and put to one side.
Peel and dice the carrots and cook with the peas quickly in some boiling salted water. Drain and put to one side.
Mix the carrot, peas and thyme with the couscous in a salad bowl. Season with mustard and mix well before serving.
