Minestrone au petit epeautre et pesto

Einkorn and Pesto Minestrone for 2 persons

  • 1 courgette
  • 1 carrot
  • 1 potato
  • 1 branch of celery
  • 200 gr of Einkorn
  • 1 onion
  • 1 tbsp tomato concentrate
  • 1 tsp of pesto
  • 2 tbsp olive oil
  • Salt and pepper


  1. Peel and dice the vegetables.

  2. Put the chopped onion into the pan and heat in a little oil, add the diced vegetables, cover with water, season, cover and leave to simmer on a medium heat for 30 minutes.

  3. During this time, cook the Einkorn in a little salted water and drain, add to the stock once the vegetables are cooked, bring back to the boil so that the einkorn grains absorb the flavours of the stock. Remove from heat and add the pesto.
